Default Pro-mash setting????????
For beer I have my system dialed in at 83% but Mead??????????

Should I assume its 100% as all those sugars are fermentable?

yes.... until you hit the wall of the alcohol tolerance of the yeast....and then again YMMV depending on how well you fed them.
