Default Orange Zest

anyone make a JOAM with just the zest and the juice of the orange instead of putting the whole orange in?

The purpose of the inclusion of the orange pith in JAOM is to offset the sweetness and act as a bittering agent. But obviously if your using a stronger yeast than bread yeast (Which will usually go up to 'bout 12% with proper nutrition, closer to 8-10% without), then the orange pith is unnecessary and perhaps highly undesired.
