I was wondering if different yeast require different nutrients. If so is there a yeast to nutrient table somewhere?

yes they do.

for lalvin. other companies i do not know as i have not seen any. that one thing that annoys the crap out of me is the sheer lack of information on yeasts.

When it says restart stuck does the number indicate the difficulty of restarting it?

number indicates how good it is at restarting it. obviously you need to pick one with number 3 or 4.
