YUP!
I haven't made it yet, but I've put some thought into it.
2# Honey per gallon
Yeast Nutrient, and Energizer per Directions per Gallon
Water to make 1 gallon
Cote Des Blancs Yeast
No heat assembly, and ferment it out.
Add 1.5# diced Peach and 2# Diced Mango to the secondary and rack mead onto fruit. This would be a good time to add Pectic Enzyme according to the package directed amounts.
Rack back off of fruit in a month, and then standard...rack until it is done throwing lees, then bottle.
I figure it should take about 6 months to clear, and bulk age, then 2 more in the bottle.
