1. Staggered Nutrient additions
2. degas the CO2 the first week of primary
3. use THE one right yeast (see the NHC sticky...I think its D-47 tho)
4. keep pH from dipping too low in primary

You can very feasibly have a medal winning mead in just 6 weeks. Many of the NHC winners proved it.
