You can but without the OG reading it won't be much good. Unless you have some of the exact same batch of honey on hand to make a test sample from that is. Basically if you add one ounce of honey then fill a measuring cup to 8 fluid ounces you'll get the concentration of one pound per gallon. You'll need three ounces of honey and theb fill to 8 fluid ounces, mix completely and then take its SG.
Often times you'll see other mazers degass, aerate and add nutrients to a batch until the 1/3 break. You need the OG to determine that. If you just want to dump the full amount of nutrient in now you can do that too. Personally I add thd nutrient before I pitch the yeast in. For higher OG musts I'll degass/aerate it until the 1/3 break. I wouldn't do any of that after the 1/3 break (bad things can result if you do). Its not a hard line but you don't want to step too far over (a few gravity points are one thing, more than 5-10 should be avoided).
