Unless it has completed fermentation it is not really safe to bottle without worrying about the pressure.
Let it completely ferment then stabilize it and back sweeten. Honey has a gravity of 1.445 so, on average, between 1 and 2 cups will raise your gravity .01 for 5 gallons. So if your mead has a FG of .996 and you have stabilized, adding about 1 cup of honey should take you to 1.06! Hope this helps.
