Default Fermenting honey without water

Can you ferment honey without adding water? If anyone has tried it, what's the finished product like?

I have three lbs of honey in a 1 gallon bottle. Thinking of throwing in a packet of champagne yeast and powdered nutrient, just to see what happens.

why do you think bees evaporate from the nectar and turn it into honey. without water yeast will not grow and eat/destroy the bees food for the winter.

you will always need to add some water in one form or another. unless the honey is already has high water content in which case its probably started fermenting before you even get it.
honey will absorb water from the air and the surface will start to ferment from wild yeasts.
