Apparently it can stand up to 21% ABV. I'm wondering if this would make a brew too "hot" or if it would be good for a secondary fermentation. Thoughts?
That's pretty boozy for a straight ferment. If you can get your hands on some, give it a try and tell us how it goes.
That should be a fine choice for a cyser.
Give it lots of time in the secondary.
