Ok, so this is my first batch of mead, and honestly my first attempt at brewing anything other than kombucha. I am wanting to start with a basic mead to set a sort of baseline for my mead making, and then start to experiment based on my tastes and whatever sounds good to me, thereafter. I was just hoping to find some feedback from other, more experienced brewers, about my honey choice. I am currently looking at getting 10lbs dandelion honey and mixing with 5lbs buckwheat for my 5 gallon batch. What are your thoughts and suggestions for a beginning enthusiast?
