Ingredients:
1.75lbs wildflower honey
.25lbs buckwheat honey
~.75 gal unfiltered shoprite applejuice
1/3 cinnamon stick
one clove
one pinch of nutmeg
1/5th package of AHS Cyser Pack
1pkg Redstar Pasteur Champagne
1/4 tsp Fermax Yeast Nutrient
1/2tsp Yeast Energizer

Warm some unfiltered shoprite applejuice on the stove, toss in 1/3 cinnamon stick, one clove, and one pinch of nutmeg. Mix in 1.75lbs wildflower and .25lbs buckwheat honey. Cool in the fermenter, add in the cyser pack, nutrient, energizer, yeast and top off with all unfiltered apple juice. The nutrient and energizer are supposed to be in the cyser pack already, but the kit that is supposed to go in was for a 1.070 batch. I added a half dose of each energizer and nutrient for good measure. This is the first time making this mead... i'll update this recipe in a number of months when its finished and bottled.
