I was going to try a Cyser/Mead i have been looking a several recipes right now.
Would i be corrected to assume i can make any mead a cyser by using apple cider instead of water in a recipe?

I wish it were winter so we could freeze it into ice blocks and skate on it and melt it in the spring time and drink it!
You'll find several cyser recipes in the Mead recipes section or through an internet search.
I've got a cinnimon-apple cyser working right now. I can't find my original recipe, but I believe it close to this (may technically be a metheglin from the cinnimon):
O.G.- 1.11
F.G.- 1.00
3 gallon apple juice
6lbs or 8lbs of honey (can't remember what I had)
2 cinnimon sticks
Lalvin D47 yeast
Yeast nutrient/energizer according to directions
Its 2 months old and I just racked it again onto another lb or honey. Light mouthfeel but not watery. Definite cinnimon taste, but balanced well with the honey and apple. Should be excellent around the holidays.
