Default Caimito season

Caimito season is fast approaching. I was thinking of a mead using caimito with vanilla beans. In case you don't know, caimito is a fruit that takes like a milk shake. (to me anyway) ..... And I figured that vanilla would be a natural in combination. Anybody got any ideas on how much vanilla to use? Anybody got any ideas at all? 18.pounds of honey, 15 pounds of caimitos and then the vanilla.....

I'm sorry, I missed the thrust of that entirely with my first post. Let me dig around for a minute.

Later: Digging 'round the internet, looks like one vanilla bean per gallon of liquid is a good place to start for most meads. Throwing in fruit, I'd say you could probably double that without any great tragedy.

Post your recipe, you can get credit for the first Caimito Metheglin
