Is it really necessary to boil the honey water? Wont it ferment and dissolve all the same if i do not boil it?

No you don't have to boil honey or water to make mead. Some do in order to ensure safe sanitation practices. Stir well and make sure your equipment is clean.

boiling honey kills a lot of the aromatic compounds....which isn't really ideal.

those that do heat their honey tend to do a lower heat, pasteurizing type method instead of a boil.

The only time I boil honey is if I am making a bouchet mead (Burnt honey mead).

Never boiled it, but I have pasteurized it before. I'm not sure it made much difference, besides the yeast will take over quicker than a bacteria.
