Read the sitcky that Hightest made. I haven't read over it, but I am sure he goes over his methods of staggered nutrients. Starting at just 3lbas would be fine and you can continue to feed in more honey to reach your desired content. I would suggest going for between 16-18% it should keep better and will not only benefit from the time, but it will actually require a lot of aging to smooth out.

yup. I've diddled with it very little and certainly not enough to have formulated a plan.

Thanks Tusch... the 1.033 per gallon thing is great for estimation to 3# per gallon...but it gets off fast because as you said....it's per gallon of water, and does NOT account for the volume of honey

Yeah, I use hightest's honey excel sheet and while I wish it was changed in a few ways, you really can get excellent estimations of your plans.

Ok, using BK's and Tusch's advice and with the help of Hightest's spreadsheet, I've come up with my initial recipe, which I posted in my original post. I would appreciate any feedback. The first one (Apple-Cinnamon) will be "brewed" 1-26-2009, 2 weeks after my oldest daughter's 10th birthday. The second will be "brewed" 2 weeks after my in-the-belly daughter is born, projected due date is 2-28-2009, so 3-14-2009. Naturally, that date is subject to change, lol. Thanks.
