Default Apple mead question

I have an apple wine that I wantto make a gallon of into apple mead.

I'm am a noob at this. My cider is fully fermented out at 12% now. If I add 1LB of honey and let it ferment for 6 months in a small oak barrel, would it end up alright?

If I am WAY off, please let me down gently!

Mead is Honey Wine. 1 lb of honey in 1 gallon will not be mead. It will be, best case, Apfelwein that you boosted the ABV of essentially by adding simple sugar. Most likely, you will just sweeten your apfelwein with the sugar because the yeast are probably at their limit. What yeast did you use? What ABV is it tolerant to? Try researching mead a bit if that is truly what you're seeking.

JAOM is a good beginner mead recipe.

I used a cider yeast. I forget the exact but it's wyeast's cider yeast.

I just read on the cider forum about someone making apple mead by adding honey to an apple wine and letting it ferment out.

You could try it, but it wouldn't really be a mead if that's what you're seeking. Worst case, you have something that isn't what you're looking for, but still drinkable.
