Default 2-years to the day...YUM!

We had a little gathering last night and I was too busy fixing random house problems to go buy wine and beer (I have 15 gallons of homebrew in the house but none is ready), so I brought up a 3-gallon carboy of mead that's been kicking around during my many moves over the last 2 years. It was made with wildflower honey from BeeBrothers in NY and somehow clocked in at 17.8%. It was so sweet and delicious, we almost killed the entire carboy!

Just wanted to post this to remind you all that if you have the willpower, let that mead age!

I've got 15#s of NJ wildflower honey sitting in the cupboard right now...I guess it's time to start another 2 year project...

Sounds like you need a pipeline. See, if you had started another batch one year ago, you'd be halfway there!
