Check out the Leap Year Mead.....It was designed as a 1 gallon to be easy to scale up.
It's roughly...3 # honey, yeast nutrient, and enough water to make a gallon. When you rack, rack onto 2 vanilla beans per gallon.
Easy...Even for me.
