Chicago Brewing Co and Big Dogs are a must. Tenaya Creek is another decent one.
I personally have not liked any of the Sin City beers.
Freakin Frog does have an amazing bottle selection and a good tap list. Yardhouse is a good one also with a big tap list and great food. Rosemaries off of the strip has amazing food and excellent beer pairings... a bit pricey though.
Burger Bar in Mandalary is another good place for beers.
As mentioned, Monte Carlo no longer has their brewpub.
I moved from Vegas a little less than a year ago, so if you have any other questions feel free to ask.
The Monte Carlo stopped brewing in their brew pub, it is just another bar, so it is not like it use to be!
Sin City is a good place to grab a brew that is fresh.
At the NYNY casino they have a bar called Pour 24 and have different mircos on tap. The have flights of beers that you can try, so you can try a few different beers at one time.
Thats sad Monte Carlo stopped brewing. Last time I was there with SWMBO we had a couple of Giraffes and I'm not really sure how we made it back to our room.

Im going in two days. I have done a little research on this yself. I was looking for places near the new strip that was walkable or almost walkable.
One that I havent seen mentioned is ellis island steak casino and brewery.
Its near the strip. Ive heard the beer is ok, the beer is real cheap, but the place is nasty.
I will proabably try it out. It also has a very cheap steak dinner.

I went to Vegas a few weeks ago.
Actually Henderson, a few mils out on Las Vegas Blvd.
I went to the Yard House, and the bar @ the new "M" hotel/casino.
The "M" was nice, and the Yard House was so cool. 160 beers on tap, I think, plus you get to walk pass the 'keg room' on the way in. Pretty cool.
+1 on Big Dog's (Its a little far from the strip though!)
And there's a few Big Dog's btw. Stay far away from the Bar & Grill on Nellis or wear a chain wallet!

There's also a Gordobn Biersch or two in town, and Tenaya Creek (if it's still there) was not too shabby either.
