Default MLT false bottom

Instead of building a manifold system for an MLT, couldn't you make a false bottom out of some stainless mesh? Would it plug up too easily? Lose efficiency? (Grain not in contact with water under the screen).

This is purely a hypothetical question, because actually making a screen to fit well would likely be more work than the manifold anyway.

Yes, lots of people use false bottoms in their MLT's. You can buy dome-shaped ones that will drop right in to certain MLT's like round coolers, kettles and keggles. Some of the fancier specialized brew kettles can be bought with false bottoms sized to fit. And, some people make custom ones out of perforated SS sheet metal.

and I can't wait to finish getting my new gear all together so I can use them.

I've only used a stainless braid and a false bottom so far and I can tell you that the braid is the simplest and very effective. False bottoms are a bit more likely to have a stuck sparge because it's made of fewer larger holes. If a few of them get plugged with a piece of grain, the overall open area is greatly reduced. Stainless mesh would be hard to support evenly which is why perf'd stainless sheet is more commonly used.
