Default Build Thermocouple for PID?

I did a quick search and came up with lots of info about building homemade temp sensors using either the LM34CAZ or the DS18B20. These projects all center around the brewtroller and similar projects. Unfortunately, I couldn't find any projects like these for creating a temp sensor that would be compatible with a PID, like the famous one from Auber.

Any thoughts out there? Are either of these sensors compatible with PIDs?

why create a sensor? A k-type thermocouple is only a few dollars: http://cgi.ebay.com/Thermocouple-K-T...item3a55eb394a

From the specs, it looks like it's compatible with pretty much every thermocouple type available
