Default Temp probe material?

I'm adding a temp probe to my xmas wish list to go with a Love dual stage controller. Is there an advantage to one kind of probe material over another. ie..stainless vs. poly etc. Thanks!

I went cheap and simple. I've got a LOVE and this works fine:

Thermistor from Digi-Key ($0.93)
Speaker wire
solder and slide into a short piece of copper tube from the hobby shop
epoxy both ends.
