Default Yooper's Hard lemonad? What yeasts will be good?

I am trying to make a 5 gallon batch of this, but would like to know what yeast would be okay. I have redstar champagne yeast that I would like to use up, but only if it will yield a tastey hard lemonade. Will the champagne yeast work okay? Any other tips on making this recipe better? Thanks.

red star should work fine, also montrachet, premier cuvee.

For dryest you might want ec-1118, cotes de blanc might be less dry.
