Which yeast?

So i have been using red star montrachet.
I also recently visited Jack Kellers site and was reading up on wine yeasts.
Its a lot to digest! My first question is, red star vs lalvin, is one better than the other in regards to brand?
Secondly how important are different yeasts in regards to flavor? I really haven't / don't plan on many grape wines as i really enjoy the fruit wines. What i have been using has been working fine, but would also like to take things up a smidge, any advice greatly appreciated!!

Both red star and Lalvin work great. As for the yeast to use Check out Lalvin and Red Star web site. They will list the strains and their uses. Oh and befor you say you really dont want to do Grape wines Welches White Grape with Cotes des blanc is awsome stuff, Or Concord Grape with Bourgovin

Yeast do make a big difference. I use both red star and lalvin yeasts. Sometimes I use the same must in two different batches and try different yeasts. You will be amazed at how different they taste.

Some yeast strains preserve a "fruity" bouquet, while others digest more malic acid, so yes, they can make a big difference. Most of the time, though, the differences are far more subtle.

Its Cider season. Go to the store and pick up some 1 gallon glass jugs of cider. Either drink em or make hard cider. Then you got plenty of 1 gallon jugs to ferment in

I really do need to do that, i have mostly just been doing 5 gallon batches cause thats all i have

Or you can find a recycler and look for the 4 liter wine bottles they all seem to have.
The local guy here knows me by name lol. Of course I bring in a couple bottles of wine when I stop. He saves the 750 ml bottles for me.
