Default wine kit secondary.
Ok, so I'm doing my first wine kit (experiened brewer) and I have a question... Just racked to my secondary, and now have to wait 10 days to stabilize and transfer. BUT, just realized I wil be out of town for that week.. so my choices are...

1. Check gravity and do it in 6 days, OR

2. Wait 16 days days and do it.

Which would be better?

Wait 16 days. It will give fermentation time to finish up.
