Default What am I making?

An acquaintance of mine had everybody convinced that what he had was a strawberry brandy. It's good and everybody likes it but now that I have his recipe I know its not brandy as he has no distillation step. 3 gallons of water, 10 lbs sugar, packet of yeast, and a few quarts of fruit. Add 4 lbs raisins after a week, transfer the strained juice to a carboy after a month and let it set for a few months. Is this just a wine? Ive made about 5 batches and it came out good, everybody loves it. Just curious what I have. Thanks!!

It's just a wine. Like you said, brandy would be distilled. You could concentrate it by freezing the finished product and removing the ice (called 'jacking') and this will give you something "similar" to a brandy. Keep in mind, if there are any fusel alcohols it will come out pretty harsh. It won't be nearly as clean or smooth as an actual distilled brandy because distillation also removes a lot of other compounds that will be left in if jacked.

I make an apple jack (fermented and freeze concentrated apple cider) that I mainly use for cooking. Sometimes it turns out pretty good for drinking, other times, not so much.
