Default WANTED! Muscadine Wine Recipe

Howdy, I'm a new member from Southwest Louisiana. I just harvested my Muscadine vine I planted last year. I would appreciate it if someone would share their recipe with me to make a good wine. 1, 3, or for 5 gallons.

The recipes in this link are for 1 gallon batches, but you can easily scale them up if you want. There are a few to choose from:

I made the first recipe on the Jack Keller site in 2009 and had a glass of it earlier today. It is delicious.

Ditto on Keller's site. I hope to be using his Muscat recipe next year.

I also did jack kellers recipe, but I got a little lost on the acid part so I skipped it. Big mistake. Muscadines are uber acidic and my wine left my teeth feeling like i ate a pound of warhead candies. Solved it by adding a table spoon of calcium carbonate to my 3 gallon batch. Just be mindful of the acid!

This one is for a traditional country style muscadine wine that turns out very well. It will need to be back sweetened as it will ferment to dry.

Here is a video I made from last yrs harvest and my white muscadine. With some age on it in the bottle I really liked it.

Here is another video that pretty much is the same as the 1st recipe I posted.
