Default Sweet or Dry

Which is best for a marinade? I want to smoke some big rib eyes like 2 inch's thick. Mike

My opinion , the dry. I think dry would counter and complement the richness of the steaks.

I prefer to marinate my ribeye in dry red wine, and I toss in some crushed garlic cloves also. You can use sweet wine but remember that the excess sugar will caramelize, and that can be just fine--though I am more likely to use an off-dry wine with ribs or something I slather in BBQ sauce.
