As a general rule when should I switch from my primary into my seccondary fermenter?
When the wine is about 1.010 or so, or when fermentation starts to slow down a bit but is still active. For me, it's usually 5-7 days depending on the temperature and what I'm making.

Just because something CAN ferment, does not mean it SHOULD be fermented.
