Default Ok Just a question

Ok I started a batch of Concord Grape wine

12 cans Welches Concord grape juice 100% juice
5 pounds of sugar
5 camden tabs
Red star sweet wine yeast (the green packet)
It said it was a slow fermenting yeast so I assumed it would take a little bit to ferment.
I added yeast nutrient on the 1st and 3rd day
It fermented like crazy for like 8 days not it has slowed down to a very very slow ferment. I tested it with they hydrometer for the OG and got 1.120 and I tested it again and it is now at 1.220. I thought it was supposed to drop not go up. Did I mess up or is this normal? It has a mild wine smell but it still smells very strong like sweet grape juice. I am just trying to figure out what is going on with this. Will the gravity go up then drop suddenly?

Probably co2 bubbles clinging to your hydrometer and throwing your reading off

I hope thats it. I will check it again in a couple days. It was just strange. It smelled good but I am making a sweet wine so I am afraid I might have messed up. It only has a hint of a wine taste its not too strong.

Did you check the SG after mixing everything up? That is by far the most important number in winemaking.

Oh, and you won't be making a sweet wine, you will be making a dry wine and sweetening it afterwords. Its almost impossible to stop a fermentation for a home wine maker.

Hi bighooligan, What kind of hydrometer are you using? 1.220 suggests a potential alcohol content of about 29 or 30 percent. I don't know any wine yeast capable of surviving in that kind of environment and given the amount of sugar you say you added to the juice I doubt the gravity of the must would be anything close to the figure you cited... Is it possible that your hydrometer readings are way off?

Your reading is incorrect. Are you sure the second reading isn't 1.022?

Ok it is just a drop on hydrometer looks like a big thermometer. I checked it again today and it dropped to 1.012 and today it has a heavy heavy wine smell and it has a bit of a burn to it when I tasted it. Not a bad burn but a good alcohol burn. It stopped bubbling in the primary almost completely so I wanted to check it again. So I transferred it to my secondary carboy threw in some pectic enzyme because I had added a pound of cherries to it so I want it to clear out well.
Oh my first reading was after I had everything mixed up right before I set it out to ferment. I learned to start taking the OG reading when I start it so I have a number to compare it to. I just write in on the side of the fermenting bucket. This is my 3rd batch so far so I am still learning but things are getting easier. I appreciate all of the advice everyone gives on here. You guys are awesome for helping out the newbies. LOL

It has great color and great smell and taste. I just need to age it and let it clear out.

It was a nice dark red color with a nice mix of grape and wine flavor. I am happy with this one!
