Can I make a 1 gallon wine recipe using a 5 gallon Carboy or do I need something smaller?

Nope...get yourself a gallon of wine at your local wine store, drink the wine, wash the bottle.

POOOF, you have a 1 gallon carboy!

No, You should use a smaller carboy or fermenting bucket. You need to keep as much air out of it as you can.
