i am going to try making a merlot what would be a good yeast to use?
should I make a starter or direct pitch?
Depends on the environment in which you will store it as different yeasts prefer different temperatures and such.
But that being said I'd use rc212...
Drank too much?...Is that a thing?
Yup rc-212 would be my choice too.
Or Vitner's Harvest R56... Those are the two we recommend at the LHBS I work at.
