This looks like some sort of early sci fi special effect landscape...or a slice of great apple crumb cake.

I modified the recipe to try for a lower ABV%...that's why you see a 1054 OG. Also added some chopped apples and skins along with cinnamon and dark brown sugar.

Man I can't wait...

I took a whiff tonight after 4 days and wow. No vinegar. No sulfur. No P....U....

Just a nice pure apple essence.

But what would you expect from something that looks like this?

6 gallons in a 6 1/2 gallon carboy may be a little close. My first batch of Apfelwien had a great kruesen on it (see below).

I used half the sugar and used brown sugar. My latest batch was 5 gallons of just applejuice and Splenda. I want a low ABV and a sweetly carb'd version.

This time there was hardly any foaming but it is fun to watch the yeast action in this much clearer version.

These are the 2 mini batches I made yesterday. The one on the right is made with fresh cider and strawberries, I woke up this morning and it had some minor blowoff but it settled down by the time I got home from work. My first 5gallon batch is about 3 weeks in, can't wait to try it and make another big batch.

This is what keeps growing on top. Any help to how to stop this or better yet what caused it would be great.

So I went to Trader Joe's and got six of these 1gal glass jugs of pasteurized, organic, non-filtered apple juice. Can I go through all of the steps up to pitching and then siphon it all back into these jugs after I sanitize them, and then pitch 1g of the Montrachet into each jug? If so, I can keep my carboy open for another beer!
