Default Making a wine kit in 5 gallons

I am en experienced homebrewer, and most of my equipment is designed for 5-5.5 gallons. I am kind of thinking about trying out a wine using one of the standard wine kits from the LHBS. I have a 5 gallon better bottle that I have used for making apfelwine in the past that I would like to use for aging a wine kit. Will making one of the standard wine kits that is designed to make 6 gallons of wine, but only adding enough water to make it around 5-5.5 gallons have an adverse effect on final product?

Yes, from all research that I have found.

The kits are made and balanced for 6 gallons. Less water throws that balance off. Someone with experience could probably "fix" it enough to make it come out fine.

If you are only aging in 5 gallons, just drink a gallon of Carlo Rossi Chianti and use the glass jug as a carboy. Problem solved!
