Hi,
I had 6 kg of grapes. Its ready to to be put in demi johns. But there is only a gallon and a half. Do I top up with water. Then add sugar to get the desired alcohol. Start grav with 1090 its down to about 1040 or so.
Any help?

Well, the answer is "no". Unless you want to water down your wine. Since there is only a gallon and a bit more, use a gallon jug with an airlock. Use a wine bottle with an airlock for the rest. You want to "match" the size of the batch with the carboy/jug/demijohn.
