Default I Have Only Racked And Added Camden Once In A Year .....

..... is my wine ruined?

It's clear, though.

Is it still on the lees? If so you should probably rack again. Try having a taste, that's the best way to tell if it's good or bad.

No, it should be just fine. As long as the airlock is intact, the wine should be fine. Sulfites work as a preservative, but they aren't strictly necessary. I don't have an so2 meter, so I "guestimate" my additions at one tablet per gallon at every other racking which is supposed to approximate 50 ppm. Since you haven't racked, you probably are just fine- just like when you bottle. You add it at bottling, but the sulfites disapate with time.

I had them out to use at kegging, but I didn't use any, since I pressurized the keg at 14 psi.

I plan to bottle it at about 2-3 psi carb.
