I Have Only Racked And Added Camden Once In A Year .....

..... is my wine ruined?

It's clear, though.

Is it still on the lees? If so you should probably rack again. Try having a taste, that's the best way to tell if it's good or bad. :D

No, it should be just fine. As long as the airlock is intact, the wine should be fine. Sulfites work as a preservative, but they aren't strictly necessary. I don't have an so2 meter, so I "guestimate" my additions at one tablet per gallon at every other racking which is supposed to approximate 50 ppm. Since you haven't racked, you probably are just fine- just like when you bottle. You add it at bottling, but the sulfites disapate with time.

I had them out to use at kegging, but I didn't use any, since I pressurized the keg at 14 psi.

I plan to bottle it at about 2-3 psi carb.
