Default I have a cherry tree and want to experiment, beginner here!

So I have a cherry tree which I believe to be a bing cherry tree that is at the tart stage and will soon be ready to pick.

Anyone have suggestions for a cherry wine or mead possibly.

I have read a few posts already and am eye balling the recipes by jack keller but anyone else have suggestions?

I am a fan of both dry and sweet wines depending on the occasion too.
