Default Hydrometer questions.

Whoo hoo! I just got a nice little triple scale hydrometer and I have a question about using it.
Can I still use it to find out if my wines/meads are done fermenting even tho I didn't have a hydrometer at the beginning to find the SG? I have three different wines/meads going right now and want to be safe about knowing when to bottle.

If your hydrometer readings have been steady for 3 straight days in a row, chances are it is done fermentation.
I always add sorbate to my wine after fermentation to ensure I won't have the yeast suddenly start up on me again.
