What are some of the best texts and sites for making wine? We fellows of the malt have Palmer, Papazian, Noonan and Daniels. Who are the wine community's equivalents?

I've yet to find a decent book. There are some old texts out there that are outdated and really not very good. I've been disappointed with every book I've seen.

For websites, though- there are two that are outstanding:

Jack Keller's site is a bit hard to navigate at first but it gets easier. (Tip- start at the bottom of the page and click on "basics". )It is THE definitive site for wine making. Techniques, science of fermentation, yeast, etc- it's all covered. He also has recipes for everything from A-Z, literally apple to zucchini.

Jack Keller is the wine world's Papazian.

Winepress is the site like homebrewtalk for wine. Great forum.
