I've yet to find a decent book. There are some old texts out there that are outdated and really not very good. I've been disappointed with every book I've seen.
For websites, though- there are two that are outstanding:

Jack Keller's site is a bit hard to navigate at first but it gets easier. (Tip- start at the bottom of the page and click on "basics". )It is THE definitive site for wine making. Techniques, science of fermentation, yeast, etc- it's all covered. He also has recipes for everything from A-Z, literally apple to zucchini.
Jack Keller is the wine world's Papazian.
Winepress is the site like homebrewtalk for wine. Great forum.
