Default Head space

I have several wines in secondaries. They each have about 2 inches of head space. At what point do I leave no head space, filled to the top?

Still new "here"............

You want to top up whenever you rack. Unless fermentation is causing it to foam up to the top, gently add the water/wine/juice that you're using to top up now.
