Default guess what I found

been out of brewing for a while and recently got bit by the bug again. Went to the basement to gather up a few things to see what all I had and to my surprise I found some apple wine I had bulk aging for just over 2 years now and the air lock still had water in it. Going to give it a sample here in a bit.

It should be the best you've ever had. I've got bottles of 2-3 year old that are just perfect.

Sounds to me as if something terribly wrong could be lurking in that carboy. What you will need to do is bottle and send to my house for "lab testing" ;-).
