gravity too low?
I've brewed lots of beer, this is my first wine. I'm making an Island Mist kit for my first try.
I made the wine on 8/2 and misread the directions (lost track of time) and didn't transfer it to secondary until tonight. The gravity is .992. The instructions say to leave it in secondary until its below .996, which obviously it already is.
Will this still finish correctly? Do I still leave it in secondary for 10 days?
The other potential problem is the secondary isn't the size I thought it was. I thought it was 6.5 gallons but after transferring the 6 gallon batch in (lost a little but not much) there's still quite a bit of room. So now I'm thinking it's 7.5, but I'm not sure. Yeah, dumb move.
