I would like to bulk-age some wine in gallon glass jugs. How would I seal them for medium-term storage, say 6 to 12 months. Screw caps that comes with them or solid rubber bungs or air lock and check the water occasionally or what would you all recommend?

I assume so. I've never had to degas a non-kit wine. The only reason you'd have to degas is if the wine is gassy (usually from very young wines being rushed to bottle)- and aging it should ensure it's not too young.
