Default Freezing elderflowers

Hi brewers,

I'm off picking elderflowers today, but can't start doing anything with them till I pick up some yeast on Wednesday. Can I freeze, and defrost them, beforehand?

late reply, but i did it once, i would get them off the stems before freezing since the stems will go a bit mushy. i don't know if it's ideal and maybe they lost a bit of zing, but it made a good wine!
