Also keep in mind that if you simply backsweeten with sugar it'll bring out quite a bit of lemon flavor

So, I'm waiting on my bottle caps to come in (should be tomorrow). My current question is, once I back sweeten and bottle, about how long should I wait before cold crashing or pasteurizing. I usually let my beer go for 2-3 weeks, but I'm a little worried about exploding bottles since I'll be adding a lot more sugar than the normal priming amount.

I try to bottle at least one in a PET bottle (an empty Coke bottle will do). Once that bottle is firm, you know you have at least some carbonation. Then it's down to chilling a couple bottles and trying one or two.
