Has anyone else made Jack Keller's choc-strawberry recipe? I'm 9mos in on a 3gal batch that I re-racked tonight...and...WOW!! Definitely young, but the delicate strawberry and lingering chocolate are a thing of beauty. Can't wait till this is bottled and ready in about a year from now. Wanted to know if anyone may be a further along and how theirs turned out.
 
I'll have to check the notes but fairly certain I used concentrate. Haven't touch this stuff since may and should prob get to bottling in the next couple weeks. Looking forward to see if/how it's matured since last racking...
 
I'm just a little confused. on Keller's wineblog he calls for White grape and more sugar but on his site under requested recipes it calls for Red grape, which Welch's onlymakes in 64oz juice no frozen. the recipe also calls for less sugar and a different yeast then the white grape one. Thanks for the help.
 
My recipe matches the one in the 'Requested Recipe' section. I'm sure I used a red concentrate, but may have been old orchard or some other brand. 1 1/2lb sugar per (I scaled up to 3gal) gave an OG of 1.102, and the Lavlin 71B-1122 ran to 1.000 in 5days.

Actually, I'm glad you said something as I'm just now at the 1yr mark and need to bottle.
 
I can't find a red concentrate in any brand, check old orchard and Welch's website neitherlist it as something they sell. have everything else. Ithought the Dutched cocoapowder was going to be the hard thing to find. I'm also planning onmaking a3 gallon batch. plan b is use his recipe with white grape and more sugar, but since you. but itseems like he liked the recipe with red grape, just not sure where or who even makes it. Just to understand you, you're not talking the regular grape, that's a Concord andlooks people right. Thanks againfor the help.
 
Hey Dan,

How much acid blend did you use? I can't see using 6 oz for 3gallons. recipe calls for 2 oz??
 
Standby..I'll do a better wright up on this tomorrow evening. Just pulled it out of the closet to settle, and be ready to rack/bottle tomorrow.

Based on SWMBO's memory of how it tasted in May, she wants to up this to a 5gal batch (and a 5gal carboy just got bottled so is empty anyway).

I'll let you know how it is thus far, but don't get hung up on the recipe. The grape concentrate is mostly for body. We'll see about the acidity, and from what I read, the dutched coco plays havoc thus the addition of blend. Notes will be forthcoming tomorrow once tasted..
