Default Choc./Cherry Mead

Making Jack Keller's Choc./Cherry Mead and instead of making 1 gal making two. Was wondering if I should add two packs of yeast instead of just the one....The yeast is Lalvin 71B-11122 and have found itis rather slow to react..

One pack is fine. It says on the packet that it's for 1-6 gallons.
