Default Cab sav kit

Got a kit and plan to bulk age a bit longer than the directions specify. Should I do this before stabilizing or after?

You want those sulfites to protect your wine as it ages.

It says to add metabisulphites for aging over 6 months. Can I use Camden tablets? Not sure I know the difference between metabisulphites and potassium metabisulphites.

Yes, they are the same thing. Add one tablet per gallon.
