Default Bottling Skeeter Pee..??

I have been following the SP recipe to the letter. My questions is when to bottle. As I look through the glass carboy, I can see bubbles rising from the bottom. SG is at 1.015... Do I let it sit another week??

I would let it sit at least a week. You want the gravity to be stable over a three day period. My SP dried out to 0.990. You'll have to stabilize with sorbate and K meta and backsweeten.

I will have to get these things. Is it just a matter of a teaspoon here and there type of thing or what is the protocol?? And I'll have to read up on backsweetening.

They'll have dosage written on the bottle. I think it is 1/4 tsp per gallon for one and 1/4 tsp per batch for the other. I can't remember. Just dissolve them in 1/2 cup of warm water and pour into the secondary after you are sure fermentation is complete (gravity readings). Do some reading on backsweetening and choose the method that is least daunting to you. Don't worry you'll do just fine.
